Go vegetarian for a month

Go vegetarian for a month

Take meat off the menu for 30 days and see what changes. The first few meals are usually easy; the real challenge comes when you need something quick, eat out, cook for other people or realise how often meat has been the automatic centre of the plate. A month is long enough to move beyond novelty and start finding vegetarian meals you would genuinely choose again. You do not need to live on salads or meat substitutes. Vegetarian cooking can revolve around curries, pasta, stir-fries, beans, lentils, eggs, cheese, grains, vegetables, tofu and dishes that were never designed around meat in the first place. The useful part of the challenge is broadening your normal repertoire rather than spending four weeks recreating burgers and sausages as closely as possible. Decide your rules before you start, particularly whether you will eat fish, and plan a handful of dependable breakfasts, lunches and dinners for the first week. Check menus before eating out and make sure your meals contain enough protein, iron and overall variety rather than simply removing meat from whatever you normally eat. Keep track of the dishes worth making again. Add this to your list and give vegetarian eating long enough to become normal rather than a one-meal experiment.
