Eat at the Iris restaurant Hardangerfjord, Norway
Board a boat at Rosendal and make the journey across Hardangerfjord to Salmon Eye, the silver, eye-shaped structure floating among mountains and water. Iris was conceived as “expedition dining”: the travel, setting and story of food from the sea were built into the meal rather than left outside the restaurant door. The original experience paired a long tasting menu with regional ingredients and discussion of aquaculture and future food systems. It earned a Michelin star, but Iris closed temporarily in 2026 while its owners worked on a new concept. That makes this a future ambition rather than a restaurant reservation you can safely assume is available now. Keep an eye on the official Salmon Eye site and book only after a reopening and current format are confirmed. Expect a high price, several hours on the water and weather-dependent transport; arrange accommodation around Rosendal and disclose dietary requirements before paying.
